Fish packages

  • 500 g fillet of cod or similar
  • 2 leeks
  • 2 parsley roots
  • 1 yellow pepper
  • 1 apple
  • 20 g diced raw bacon
  • 2 tbsp extra virgin oliveoil
  • 2 tbsp apple cider vinegar or lemon juice
  • a little coarse salt and a little pepper
  • 4 pieces of baking paper


  • 400 g wholemeal bread or buns
  • 3 tablespoons pesto for the adults NOTE: pesto is too salty for the child
  • oil or mixture product for the child's bread


  • Turn the oven to 200 degrees
  • Clean the leeks and cut them into strips.
  • Peel the parsley roots and cut them into thin sticks
  • Clean the pepper and cut it into small cubes
  • Cut the apple into small cubes
  • Put the oil in a pan and saute the bacon in it for a few minutes. Add the leeks, parsley roots, peppers and apples and sauté it all for 3-4 minutes
  • Add vinegar and bring to the boil. Taste the food and season with a little salt and pepper. Remove the pan from the heat.
  • Cut the fish into 4 identical fillet pieces and place them on a separate piece of baking paper.
  • Spread the vegetables over the fish
  • Gather the paper around the fish and stuffing. Close with a paper clip
  • Place the packages in a baking pan on the middle oven rib for approx. 15 minutes until the fish is just tender
  • Serve the fish packets with bread smeared with pesto or butter.
