Egg Pancakes

You can serve boiled green peas, cherry tomatoes and rye bread for the egg pancake. Spread some extra virgin olive oil or butter on the baby's bread.


  • 4-6 eggs
  • 2 tablespoons wheat flour
  • approx. ½ dl milk
  • a little butter and oliveoil for frying


  • Beat eggs, flour and milk together into a dough without lumps
  • Heat two pans on the stove and add a little fat. The egg pancake browns best in a mixture of butter and oil
  • Now pour a little of the egg mass onto each pan. You need to bake 2 large and 2 smaller egg pancakes
  • Fry the egg pancakes as usual pancakes, ie. on both sides. They should be rather thin.
  • Fold the egg pancakes and serve them on a platter.
